Not at all, there is no hazard whatsoever to your health! After eating beets, it may happen that urine or stools are coloured in red. This is explained by the fact that beet pigments were absorbed by the intestine instead of being broken down. Stomach acidity or a fast digestion may explain the phenomenon.
Is it true that red beet may be used as a dye?
Yes, red beets owe their magnificent colour to their high pigment content, namely betalains. Those pigments may be extracted and used as a 100% natural food dye. However, this is a totally different sector from red beets, which are intended for food consumption.
